Amazing Romances Sauteed Vegetables

This sauteed vegetable dish is appropriately named because of the cool little vegetable I found and used in it.  The vegetable is called, Romances Cauliflower,  it's basically a mix or hybrid of two cruciferous vegetables; broccoli and cauliflower.  This hybrid vegetable dates back to the sixteenth century and is very aesthetically pleasing to the eye.  It also holds up well when sauteed and has a slight sweet taste.  In this dish I also used parsley root, kale stems and dark purple onion which really was a wonderful combination of flavors.  Then I used one of the kids favorite vegan/gluten free Indian Simmer Sauce which added a warm tropical coconut and tamarind flavor on such a COLD night.
If you can't make this dish exactly you should at least try the sauces I have pictured at the bottom of this post.  They truly make dinner a breeze.
The Romances Cauliflower adds so much texture to the plate...can you see them?
 Ingredients:

1 head of Romances Cauliflower, stem removed
4 parsley roots, peeled and cut into chunks
1/2 purple onion, diced
1 red pepper, diced
1 head of broccoli, stem removed
1/2 cup kale stems, chopped
1/4 cup Olive oil
1/2 jar of Goan Coconut Indian Simmer Sauce, pictured below
1/2 cup water

Method:

Start by sauteing onion, broccoli, red pepper, parsley root in olive oil, add the remaining vegetables and saute until almost done.  Then add the Indian Simmer Sauce and water and continue until vegetables are cooked to your liking.  Serve at once!  This fed 3 of us, so you might just add more vegetables if you have four people. Enjoy!

Here is the cool little Romances Cauliflower
I used the Goan Coconut Sauce, but these two are my favorite!

The Parsley Root
ENJOY!

Green Goddess Smoothie Bowl

You have to want to get your Greens in to enjoy this one.  Another bowl packed full of SUPER GREENS.  I find it fun to use ingredients other people just walk by at the grocery store and/or they are afraid to use... (Baby kiwi's or celery root for example).  I say, "Why not be creative and do something a little different?"  This was lunch today for me and I loved every bite.  Feeding by body well so I can PLAY HARD!  Here are some reason I use Spirulina: 1) It's a bacteria (blue-green algae) that is a superfood because it offers benefits to every organ and bodily function). 2) It strengthens the immune system. 3) It promotes cell regeneration and helps wounds heal quicker. 4) Spirulina assists in keeping eyes healthy, very rich in vitamin A.... it actually has 10 times the amount of vitamin A that carrots have.  This is just SOME of the benefits, combined with Wheatgrass this smoothie bowl is a real powerhouse.   Have a GREAT DAY!
Get your glow on!
 INGREDIENTS:

1 scoop of Amazing Grass Wheat Grass
1/4 cup organic fresh Wheatgrass
6 baby kiwi's (the whole thing not peeled)
1 fresh pineapple core (don't throw it away it's perfect for the vita-mix)
1 cup organic Spinach
1 peeled parsley root
1/2 cup chopped parsley leaves
1 teaspoon spirulina powder
1 tablespoon Barlean's Omega fish oil (I used Pina Colada... its what I had on hand)
1 cup organic pineapple juice
1/2 cup water

Method:

Easy peasy:  Just place all the ingredients in a Vita-mix and blend away.  Decorate how you wish.  Remember...FOOD SHOULD MAKE YOU FEEL SEXY! XOXO

Pink Lemon Delight

This smoothie bowl has a ton of greens but it's made with a Pink Lemon to make it a tad tart, but full of lycopene.  A couple little facts about Pink Lemon Trees. 1) They are actually their own variety of lemon tree and not a hybrid. 2) They don't produce as many lemons because they are a little lower in chlorophyll. 3) The flesh is pink from the lycopene (The same compound that colors pink grapefruit).
Perfect!
Ingredients:

1 teaspoon spirulina powder
1 cupful Amazing Grasses (Brand) Wheatgrass
1 large handful purple Kale, organic
1 cup spinach, organic
1 green Apple, organic
1 fresh mango, seeded, organic
1 cup mango juice, organic
1/2 cup filtered water
1 tablespoon Barlean's Swirl (Orange)
1 whole organic Pink Lemon, including the rind

Method

Blend all in a high powered blender (vita-mix), serve with slices of pink lemon, sprouted almonds, Chia seeds sprinkled on top.  VIOLA, Fancy pants smoothie bowl! ENJOY!

Mom & Son Smoothies... with Mango Slushy Topping

My little guy is still recovering from the concussion.  When I got home this morning he said to me, "Mom can you make me the smoothie bowl but not in a bowl?"  I replied, "Sure"!  But, of course as I began making it I thought, "Well, this is kinda boring and I want a bit of greens mixed in mine...Oh and maybe a Mango slushy topping".  So, in this little post I'm just going to tell you how to make the Mango topping that is on my drink because I've already posted the recipes about the blueberry and green drink portion of the beverages.  If you want to look it up, the blueberry portion is the "Concussion Smoothie Bowl" and the green part of my drink is what I called "Blooming Banana Greens in a Jar". But, seriously the best part of my drink is the TOPPING!  It's what I make when I want ice cream.  This is super easy and works with any frozen fruit.  The only catch is you need a high powered blender or this won't work.  Enjoy!!
My drink is to the left!  I topped it with My Mango slushy and fresh mango slices.... YUMMY!
 Ingredients:

1 Cup Frozen Organic Mango Chunks
1 heaping teaspoon of Organic honey
1/4 cup fresh water or mango juice if you have it, you can even use Almond milk

Method:

Blend on high in Vita-mix, this won't work unless you have a high powered Blender.  But, I must say it's my favorite summer time beverage and worth making if you have a high powered blender.  I substitute frozen pineapple, blueberries, cherries, peaches...literately any fruit.  Enjoy, Enjoy!
I also topped mine with sprouted Almonds....YUM~O!

Morning C's plus Wheatgrass

What to do when everyone in the house is coming down with a cold?  Well, in my case it's giving everyone an overload of Vitamin C, Echinacea and Goldenseal.  I don't really go too over board but the idea is to knock this out of our bodies so we can go have fun.  They call Echinacea and Goldenseal "The Dynamic Duo".  I put the liquid extract in a drink of choice and today I also added the benefit of Vitamin C and Wheatgrass.  You would never know I'm drinking these powerhouses because I have hidden them in the drink.  HA, HA the guys don't know, wink, wink!
It helps the "Medicine go down" when I make the drink cute!  This doesn't taste like medicine..I was teasing!
Ingredients:

1/2 scoop of Organic Wheatgrass (Scoop comes in container)
1 dropper full of Echinacea
1 dropper full of Goldenseal
1 teaspoon of vitamin C powder (1000 mg)
2 cups pineapple (I used fresh with the juice)
1 cup papaya (I used fresh)
2 kiwi fruits (Skin removed)
1 cup celery
1 tablespoon Barlean's Swirl (you pick which variety you like) the kids like Pina Colada

Method:

Blend all together in a Vita mix and decorate how you wish.  I used Dried papaya slices (low sugar) and kiwi stars for a little fun design.  P.S. This is how I distract the boys from eating healthy food.  Sometimes it works other times they catch onto me, lol!

I cut little kiwi stars for inside the beverage... but they are hard to see!
A little Yoga from yesterday's evening hike, I loved the heart shape in the rock to the right of me, kinda cool!
Have A Healthy and Happy Day!

Cherry Vanilla Loven Smoothie Bowl

This is for my workout friend... she knows who she is!  A little Valentine's Loven for her, of course I ate it... but my heart was in the right place.  The fun thing about smoothie bowls is you really can have fun decorating them up before serving.  Not to mention you can add all kinds of healthy toppings.  In this smoothie bowl I used organic frozen Tart Cherries!  Here are some benefits you most likely didn't know was hiding in these tasty tart little things.
1) Cherries battle belly fat:  In a study done on animals they noticed when they were fed Tart Cherries they had a significant lower belly fat!  Maybe that's why I like them...lol!
2) Cherries combat post-workout soreness:  Studies show 1 1/2 cups of Tart Cherries or 1 cup Tart Cherry juice significantly reduces muscle soreness.  Drink up workout buddies!
3) Cherries reduce stroke risk: Researchers from the University of Michigan Health System found that Tart Cherries provide cardiovascular benefits equal to some medications.
Cherry Loven
