The Calm Before The Storm Smoothie Bowl

  Yea, I have fun making up names as much as I have fun making up new recipes. This Smoothie bowl is full of Super-foods again.   Here's to the next snow storm.  Have a great day.
Ingredients:

1/2 cup chopped fennel bulb
1 cup blueberries
1/4 cup pomegranate seeds
1/4 cup fresh wheatgrass
1 scoop wheatgrass (Amazing grasses brand)
1/4 cup fresh parsley
1/4 cup fresh mango
1 banana
1/4 cup pear juice
2 tablespoons Barlean's swirl (Blackberry/blueberry)

Method:

Blend all ingredients together in a vita-mix and decorate how you wish.  Enjoy!

Green Mango Martini's... Non-alcoholic with Protien

Once you read the ingredients you'll know calling this a Martini is a HUGE stretch...even for me!!! But, I'm sure you all have that one friend that is extremely health conscious.  Well, this green mango martini will please them and is loaded with healthy ingredients including protein.  Did I mention it looks really cute in a martini glass...'SAY YES' to this green drink...ENJOY!

2 cups spinach
1 frozen banana
1 cup frozen organic mango chunks
1 scoop Sun Warrior Protein Power (Vanilla)
8-10 drops Sweet Stevia Drops
1 tablespoon Barlean's flax seed oil
1 cup Mango juice
Mango wedges for decoration
  
Place all ingredients (Except for the decoration mango wedges) in a vita-mix or high speed blender, poor in Martini glasses, use mango wedges for decoration and serve.  Serves two people.

Coffee NO MORE... A Superdrink Alternitive called "Tiffany's Winter Warrior Drink"

As winter settles in I enjoy warm drinks.   I will go for a coffee made with almond milk but know that I could have something with a little more health benefit.  So, the other day while walking around Whole Foods I was in the vitamin section and came across this new product by Spectrum Essentials called "Warrior Vitality Blend".  It's a blend of Chia, Maca and Cacao nibs with a natural Caramel Vanilla Flavor...what's not to like?  RIGHT???  The bag suggests putting this on yogurts, smoothies and in baked goods so I thought what the heck I love coming up with recipes.  Well, here it is all perfected for you all.  I of course put a little Swedish spin on this with the addition of Cardamom and think it's wonderful.  This blend contains 4g of Fiber, 37mg Magnesium, and 80mg of Potassium, It also contains 2.2g of Omega-3 (ALA) Fatty Acids.

"Tiffany's Warrior Drink"

* 3/4 cup almond milk (or milk of your choice)
* 1 tablespoon raw chocolate shavings
* 1 tablespoon of Spectrum Essentials "Warrior Vitality Blend"
* 1/4 teaspoon Cinnamon
* 1/4 teaspoon Cardamom
*  1/8 teaspoon vanilla extract
* 1teaspoon Organic Raw honey

Method: Warm Almond Milk in Microwave with added Chocolate Shavings, once it's at desired temperature add the remaining ingredients, stir until dissolved and serve.  Makes one small coffee mug full,

Fall Crock-pot for the O Blood Type

As most of you know from reading the blog I follow eating according to my blood type as closely as possible.  As soon as I'm not feeling my usual I start monitoring and following my food intake very strictly.  I try to eat ONLY off my "Highly Beneficial" list and will throw in a few neutral spices here and there to "SPICE" things up...OH MY REALLY BAD HUMOR, SO SORRY!  Here is my Fall Crock-pot staple that I make.  I then can use the meat during the week to feed the kids in a variety of ways, for example I'll make them burritos or something of that sort while I just stick with the warmth and hardiness of this stew for me.  I'm only telling you this because if you have children you will find they get bored and would not want to follow my meals.  So, I have to get creative for them and make it easy on myself all at the same time.  Hope you all enjoy this one.  I LOVE IT!

3-4 pounds boneless grass fed beef
olive oil
2 cups onions sliced
1 cup carrots (this is a neutral...but for the kids)
1 cup Parsnips, cut into chucks
2/3 cups turnip, cut into chucks
3 sweet potatoes, cut into chunks
1 tablespoon fresh ginger,  cut into pieces
1/2 cup red wine
Salt & Pepper to taste
Springs of rosemary for in the crock-pot, and fresh one to decorate your dish when serving:)

Browning the meat: Make sure the meat is thoroughly dry with paper towels - Damp meat WON'T brown!!!  Place olive oil in the pan about 1/4 cup (depending on the size of your pan), next place your dry meat in the hot oil and brown in batches, Turing the meat as needed! Add more oil as needed until you are finishes.  Transfer all the meat into a crock-pot.
Vegetables: Next, keep the pan you just browned the meat in and add fresh oil (just dump the old oil out). Then place the vegetables (Onion, carrots, turnip, ginger) and saute until still hard but a little brown.  Place this in the crock-pot.
Assembling:  Now, skim any remaining fat (oil) out of the pan and poor the red wine in and allow it to boil down a little.  Poor this into the crock-pot.  Now add the remaining ingredients into the crock-pot (Sweet-potatoes, rosemary, salt and pepper).  Stir lightly, place the lid over top and allow to slowly cook for 6-8 hours (depending on your crock-pot).  ENJOY!  I give the kids crusty bread on the side because they can have the wheat!  I on the other hand STAY AWAY from the bread!

Tiffany's Staple Green Drink

Well, here it is the staple green drink I have just about everyday.  Give or take some of the items if I just don't have them in the refrigerator that day.  But, usually this is what is in the drink.  I do occasionally add ginger, parsley or spinach and omit the mint during the winter months but, that's only because it's not growing in the little patch I have growing in this yard.  I do prefer to have the mint thou, it makes me feel better for some reason.  So, try out what works for you and go with it!
1 handful of Fresh Mint
1 handful of Kale (I substitute spinach, parsley)
1/2 cucumber (If organic put the whole thing in, if not peel)
1 green pear (again if organic put the whole thing in)
1/2 Lemon (with the rind if organic)
1/2 cup pineapple juice
1 cup water (or to your liking)
1 scoop of Garden of Life Super Seed Fiber (can purchase in Store under Vitamin's)
Ice
1 1/2 Tbs. Barlean's Pina Colada oil (This can be Purchased as well in Tiffany's Therapy Store)

Directions:
Place all Ingredients except for ice and Barlean's Pina Colada (Don't want to waste any, it's expensive) in Vita-mix or blender (Ingredients might need to be cutup well if you don't have a Vita-mix. After you have it blended place in glass and stir in Barlean's Pina Colada oil and ice cubes.  After tasting this you won't want that morning coffee!

Morning Detox Berries and Pears with Mint and Stevia Sauce

Typically when I'm detoxing I have very little time in the morning to make a nice breakfast.  I usually grab a fruit, hard boiled egg and I'm off starting my day.  But, on weekend mornings I have a little more time to focus on what I'm eating.  So, this is a healthy alternative for the days you are detoxing!  Quite frankly I could eat these berries every morning!


 Ingredients for sauce:

 5 strawberries
1/2 packet stevia (about 1/2 teaspoon)








2-3 mint leaves
2 tablespoons filtered water

Method:

1) Mix all ingredients in high powered blender or small Cuisinart on high.  Should resemble  the picture below.

Ingredients for berries:

6 strawberries, sliced
1/2 cup blueberries
1 small Anjou pear, skin removed and sliced
7-10 small mint leaves (Don't do too many because the mint becomes over powering)


Method:


Mix in a bowl and add Mint and Stevia Sauce.


With my Detox Breakfast I had a hard boiled egg (protein):
Of course I always make a few more for the week...It just makes detoxing easier!

Aduki and Black Bean Burgers

What's Aduki you say???  It's just another can of beans you can purchase near the other cans of beans in the store.  It's really not fancy!  They can be spelled azuki, adzuki, or as I found them aduki.  These beans are a small, russet-colored bean with a sweet flavor.  The can I purchased also had Kombu Seaweed in the ingredients but you can't taste any seaweed at all (maybe just another health benefit)!
Ingredients:
1 15oz. can aduki beans, washed and drained
1 15oz. can black beans, washed and drained
1 medium onion, cut in half
2 cloves garlic, minced
4 reconstituted mushrooms, optional
1 tablespoon fresh thyme
1/2-3/4 cup almond meal
1/4 cup all purpose baking flour (Bob's Red Mill Gluten Free)
Salt and Pepper to taste
Olive oil

Toppings:
Sliced green onions, sliced baby tomatoes, sliced avocado, vegan or regular mayo, spinach leaves, parsley leaves, lime juice to squeeze on top.

Method:
1) Place 1/2 can aduki beans, 1/2 onion diced into small chucks, fresh thyme, garlic, reconstituted mushrooms (optional),  1/2 teaspoon salt, 1/4 teaspoon pepper into Vitamix blender or high powered mixer and blend.

2) Once blended pour into a bowl and add the rest of the aduki beans, and can of black beans.  Mash with a hand masher just to get well blended (some chucks still visible).
3) Dice the other half of the onion and mix into the bean mixture.  Add almond meal and baking flour (I used gluten free) and make into patties.  The patties will be sticky, if to wet add more almond meal.
4) Place oil in frying pan and heat on medium-high.  Place patties into frying pan, lightly salt and pepper and cook until lightly browned.  (I did patties in batches, placed on a parchment lined pan and put in the oven on 300 to keep warm until I was ready to serve).

Big Day Breakfast...Smoothie

Some mornings the outlook on the day seems so long... it makes you want to jump back into bed!  Or...you can just jump start it with an easy to prepare smoothie that is energy packed!  This one is a wonderful fuel for our bodies because the bananas and sesame seeds provide a perfect fuel in the form of slow-release carbohydrates.  Oh... and did I mention your not compromising taste because with the added mango and orange juice make it refreshing~YUM! 


SERVES 2

1 whole mango, peeled & cored
2 small bananas (By this I mean NOT Costco sized...just regular)
1 large orange, (Juice of)
2 tablespoons raw sesame seeds
1 tablespoon honey
4 ice cubes

METHOD

Place all ingredients in Vita-mix blender.  I juiced the orange with a little hand-operated citrus squeezer and used all the pulp (Pictured below). ENJOY!
