Mom & Son Smoothies... with Mango Slushy Topping

My little guy is still recovering from the concussion.  When I got home this morning he said to me, "Mom can you make me the smoothie bowl but not in a bowl?"  I replied, "Sure"!  But, of course as I began making it I thought, "Well, this is kinda boring and I want a bit of greens mixed in mine...Oh and maybe a Mango slushy topping".  So, in this little post I'm just going to tell you how to make the Mango topping that is on my drink because I've already posted the recipes about the blueberry and green drink portion of the beverages.  If you want to look it up, the blueberry portion is the "Concussion Smoothie Bowl" and the green part of my drink is what I called "Blooming Banana Greens in a Jar". But, seriously the best part of my drink is the TOPPING!  It's what I make when I want ice cream.  This is super easy and works with any frozen fruit.  The only catch is you need a high powered blender or this won't work.  Enjoy!!
My drink is to the left!  I topped it with My Mango slushy and fresh mango slices.... YUMMY!
 Ingredients:

1 Cup Frozen Organic Mango Chunks
1 heaping teaspoon of Organic honey
1/4 cup fresh water or mango juice if you have it, you can even use Almond milk

Method:

Blend on high in Vita-mix, this won't work unless you have a high powered Blender.  But, I must say it's my favorite summer time beverage and worth making if you have a high powered blender.  I substitute frozen pineapple, blueberries, cherries, peaches...literately any fruit.  Enjoy, Enjoy!
I also topped mine with sprouted Almonds....YUM~O!

Mango Mountian Madness Smoothy

This smoothy contains a little MADNESS in the smoothie because of the secret ingredients (and the story that follows).  My kids always tease me when I say I'll make them a smoothy, they say, "So Mom... What did you hide in this drink?" I respond, "WHO ME...NEVER"!  But, in all seriousness it's a great way to get some extra vitamins, herbs or minerals without swallowing a pill.  The trick is to make it still taste good... this one tastes like a Creamsicle... only better!

A perfect blend of Mango, Orange and Banana with Benefits

A close up of the desert in a Jar... or at least it tastes like it!

Cold Snowy Morning Oatmeal with Glorious Green Milk

We awoke to more snow and a little two hour school delay for the boys this morning.  Time to make Oatmeal to start the day off right.  The boys just like regular milk , almond milk or Kefir in their oatmeal, but of course I had to figure out a way to get some Wheatgrass in this or I was going to need to do the shot.  I bet you can guess what I did by looking at the picture...Yep I figured out a way to change my almond milk to a yummy topping using the Wheatgrass, Vita-mix and some creative ingredients from the refrigerator.  Here it is a Glorious Green Milk.
Ingredients:
(Glorious Green Milk)
2/3 cup almond milk
1 tablespoon hemp oil
3 tablespoons Pumpkin butter
1/4 teaspoon cloves
1/4 teaspoon cinnamon
1/2 frozen banana
1 scoop Organic Wheatgrass

Method:

Blend all the above ingredients in a Vita-mix, poor on top of your oatmeal that you make separately according to directions on the container and top with walnuts, raisins or whatever else you would like (I used some thinly sliced carrots).  This tasted like I was eating pumpkin pie only it was green and without the whipping cream.
And of course Lilly got in trouble on her hike today... She went after a coyote! BAD DOG!

Taste Grass - NO MORE...Smoothie

Yes, I named this smoothie, "Taste Grass - NO MORE" but for a good reason.  The taste of Wheatgrass really makes me sick if I do a single shot of it all by itself.  "Why, would you even put this in your mouth then you ask??"  Well, Wheatgrass has been used for years as an herbal medicine for its therapeutic and nutritional properties.  It became hugely popular by Ann Wigmore who had healed herself from cancer with this, among other things.  She wrote many books on the healing properties of Wheatgrass and it has been used in Sweden, Puerto Rico, Australia and the United States.  She was also one of the founders of the very popular Hippocrates Institute Healing Center
This grass is known for numerous things but most importantly blood purification, liver detoxification, and colon cleansing.  This amazing grass contains Chlorophyll, numerous enzymes (Cytochome, lipase, protease, and Superoxide dismutase otherwise known as SOD which helps with preventing aging...just to name a few), numerous vitamins that fight against free radicals (Vitamin C, Vitamin A, Vitamin B-Complex...just to name a few),  and numerous Minerals and Amino Acids (Magnesium, potassium, calcium, Tyrosine which aids in the formation of hair and skin and prevents cellular aging).  You can find this product now in powdered form and once it's opened keep it in the freezer or you can juice your own grass that you grow.  I don't have time to grow the grass anymore, sometimes I grow it at Easter time in a cute basket, but otherwise I just buy it from my natural food store in town.
There are a few ways to take Wheatgrass.  First, you can drink this grass in a single shot and get it over with.  In my case this makes me ill.  So, I prefer putting it into a smoothie...then I can't taste it.  I think the smoothie recipe I did today was probably my most successful attempt at NOT tasting the wheatgrass and I don't feel ill at all.  The other way to take wheatgrass is rectally through enemas and implants, but I can talk about that in the Detox section of this blog.   Let's get to the recipe I think I typed too much today:)  Have a great day.

Ingredients:

1 frozen banana
1 scoop of Organic Wheatgrass (Amazing Grass brand)
1 cup Rappini, not packed
1 cup spinach, not packed
1 small apple (or 1/2 large one)
1/4 cup frozen cherries
1/4 cup frozen wild blueberries
1/4 cup frozen mango
1/2 cup Organic Black Cherry Juice
 1/2 cup filtered water

Method:

Place all ingredients in a Vita-mix and blend on high for a minute, until all is blended well.
Serves 1

ENJOY!

Wild Rappini Blueberry Probiotic Smoothie

I felt like I needed some Probiotic's today for some reason so I decided to pickup a container of Mega Probiotic from inner-Eco and add it to my afternoon smoothie.  I also really wanted greens but wanted my drink to be any other color than green today...for some reason.  This drink was just what I was craving and I got the extra bonus of having a Probiotic at the same time, not to mention all the ingredients are on my highly beneficial list for my blood type!  YEA!!!

Ingredients:

1 1/2 cups Rapinni
2/3 cup frozen wild blueberries
1 frozen Banana
1 cup water
1 container of inner-Eco to go Mega Probiotic (Berry Flavor)
Chia seeds to sprinkle on top of drink

Method:
Place Banana, Rapinni, wild blueberries and water into vita-mix and blend on high, 2 minutes.  Poor
into a clear glass and immediately poor the whole bottle of inner-Eco Probiotic into smoothie, this will fizz when it hits the smoothie (Just remember not to shake the contents of the probiotic), top with Chia seeds if you would like and drink at once.  This is very refreshing.

Here is the Ingredients!

The white foam on top is the addition of the probiotic

Enjoy!

Easy Foil Baked Cod on a Bed of Spinach

I love sea bass and was originally going to make this recipe using that particular fish.  All I could find however, that looked and smelled fresh, was Cod.  So... I decided to use Cod to see how this recipe turned out and it was a big hit with the boys.  I hate to admit it but, when this fish is presented on a garlic salad (recipe is on this blog), it's so pretty you'll want to eat it.  Did I mention this recipe is super easy to make and is highly beneficial for all the blood types.  So, enjoy!

3-4 Cod Filets
1/4 cup olive oil
3 cloves of garlic, minced
1 tablespoon Celtic Sea Salt
1/2 tablespoon freshly ground pepper
1/4 cup white wine
Lemon wedges for Garnish

Take a piece of foil and line with parchment paper.  Place fish on parchment paper.  Mix olive oil, garlic, salt and pepper in a small container and divide equally on top of the fish.  Allow to marinate for 20 minutes while you preheat the oven to 450.  When oven is preheated, poor wine equally on top of each piece of fish and promptly place in the oven.  Meanwhile, make the Garlic Salad Dressing (Recipe located on this blog under Salad's).  Arrange spinach on plate, decorate with tomatoes if you would like and when fish is fully baked (around 10 minutes), place on top of the salad.  Serve ASAP.  ENJOY!

The Marinade being applied to the fish.
Marinade applied and waiting for the oven
Before putting the fish in the oven put 1/4 cup white wine on the fish.  Always make sure to cook with a white wine you drink, never use cooking wine.

Winter Wonder Green Drink for the O Blood Type

When winter kicks into full gear I usually crave warm food and drinks.  However, lately I've just been wanting my standard green drink for some reason.  I've decided to add to it a bit and make it a highly beneficial green drink by not adding anything that;s not considered beneficial for my O blood type.  Hope you can make this one at home...it's like a mini vacation for your mouth to a warm climate!  Enjoy!
Winter Wonder Green Drink
2 cups spinach
1 cup collard greens
1 cup kale (I did baby kale)
1/2 cup Dandelion greens
1 green plum, pitted
1 tablespoon fresh peeled ginger root
2 fresh figs
1 cup organic pineapple juice
2 tablespoons Barlean's Pina Colada Fish Oil Swirl
1 teaspoon B12 liquid (your choice of liquid vitamin), this was one dropper full for me
3/4 cup water

Mix all the ingredients in a Vita-mix, or blender of your choice and ENJOY!

Simple Adzuki Dinner...Highly Beneficial for O Blood Type Diet

Some of you are reading this and thinking...WHAT is that?  Well, Adzuki (or Aduki) beans are most likely one of my favorites because of the health benefits they provide.  They are on the Highly beneficial list for the O Blood type diet (I should say lifestyle) and also a staple if you eat a Macrobiotic diet.  These little small red beans are a protein packed staple in my house and are known in Traditional Chinese Medicine to support healing properties for the kidney, bladder and reproductive function.  These beans are a good source of magnesium, potassium, iron, zinc, manganese and B vitamins.  They could also be considered the "weight loss bean" since they are so low in calories and fat, yet very high in nutrition content.  Did I mention these beans really don't give you "gas" either??? Well, see now I've given you a ton of reasons to eat these little guys.  This recipe I have here I came up with because I'm trying to only eat highly beneficial for my blood type.  I did place some sliced Avocado around the egg because I thought they added color.  I know...I know Avocado is on my "Avoid" list for the O blood type list.  But, all the other ingredients are on my "Highly Beneficial" list and make my metabolism run at maximum speed.
2 tablespoons Extra virgin olive oil
1/2 sweet onion diced
1/2 red pepper diced
1/2 can Aduki beans, drained
1 small clove garlic, minced
1 tomato diced
1 egg, over easy
1 tablespoon fresh parsley, minced
Few slices of Avocado for decoration if wanted and your diet allows

Method:

In a small sauce pan saute onions, garlic and red pepper in olive oil.  When onions begin to turn opaque add beans and saute another 2 minutes.  Add tomatoes and parsley and saute on low while making egg in a separate pan.  When egg is done, transfer beans to a plate and place egg on top and add avocado slices if you wish.  Enjoy!  This is crazy healthy and is quick and easy to make.

The beans

Sauteing!

Oops...I ate it all!

Tiffany's Baked Cranberry Sauce

Every year I get the same question... "How do you make that yummy cranberry sauce you made last year!"  So, here is the recipe!  It's super easy and so delicious that I make it for Christmas too.  Enjoy!
1 lb bag fresh organic cranberries
2 cups organic sugar
12 oz. bag of frozen whole raspberries, thawed
3 tablespoons orange flavored liqueur
1/2 cup organic sugar

Method

Spread rinsed and drained cranberries in a glass 9X13 baking pan (I always use my heart shaped pan...Just because I like to be different...smile).  Sprinkle evenly with 2 cups sugar, toss to coat.  Bake in a preheated 350 degree oven until hot and bubbly and sugar is dissolved (about 40 minutes), stirring twice.  Gently stir in raspberries, liqueur and 1/2 cup sugar.  Refrigerate, covered.  I make this a couple days in advance and then I have less to do on the day of Thanksgiving.  Yummy and perfect to put on top of the Turkey sandwiches the day after Thanksgiving too.  Enjoy!

See I always put the cranberries in this cute pan to bake...It's the little things:)

Chicken Avocado & Tomato Salad

Can you believe the end of summer is here?  I'm not sure why summer seems to go by so quickly, but it's a reminder to LOVE every minute of it when you're able to!  Today, I decided to make a quick lunch and just "BE" outside.  I REALLY DID nothing!  I just sat out on the front lawn with my dog and just soaked in the sun.  I'm sure in a month or two I'll look back on this day and and dream about how wonderful the grass felt and how amazing the sun (Vitamin D) felt on my skin.  Here is a tasty end of summer treat to use up those amazing tomatoes you have in the garden.  Keep DREAMING...WE ONLY LIVE ONCE!
Oh... and if you're one of my O blood type friends this is great except for the Avocado, but you can always have a few things on your avoid list every once in a while.

1 boneless chicken breast, sauteed on stove-top in a bit of olive oil, diced
1 ripe avocado, sliced
1 vine ripe tomato
1 bunch of fresh basil
1 handful of spinach leaves
Salt and Pepper to taste (Salt with Iodine)
3/4 tablespoons of olive oil
1 teaspoon balsamic Vinegar

Method

1)  Saute 1 boneless breast on stove-top in a bit of olive oil... I add Salt and Pepper. (I usually do a package of chicken a week and keep the breasts in the refrigerator for easy food preparation on quick meals, this way I can make the kids quick burritos, salads, sandwiches, pasta dishes...or whatever).
2) Place handful of spinach in a bowl
3) Add diced tomato
4) Add sliced avocado
5) Drizzle olive oil and balsamic vinegar over top, sprinkle salt and pepper to taste and GO SIT IN THE SUN with your yummy salad:)
