Avocado Egg Salad Sandwiches


  While watching the Minnesota Gopher Football game today...I needed to feed boys.  I had a ton of Avocados so I decided I needed to use those in something.  I put together a quick Avocado Egg Salad sandwich that was a hit.  This was really easy and a nice variation on the usually boring egg salad.

As you can see I bought too many Avocados!


Ingredients:
2 Ripe Avocados
4 hard boiled eggs
2 Tablespoons Lemonaise
1/4 teaspoon dry mustard
Salt and Pepper to Taste
Crusty Bread of your choice, toasted

Process:
Mash hard boiled eggs and avocados in a separate bowls.  Add dry mustard to the hard boiled eggs along with salt and pepper.  Gently, fold the mashed avocados in with the egg.  Add place on top of your favorite crusty bread!  Top with a tomato or two and VOILA...You can feed those STARVING BOYS!

Turkey Bacon, Lettuce and Tomato Sandwich

Today's little burst of winter made me long for the days of summer...again!  In fact, I don't want to see SNOW for a VERY, VERY long time.  So... when it came to making dinner tonight I pretended it was a warm sunny day and made BLT's for the boys!  Of course, I made these a little healthier by using turkey bacon, instead of regular bacon and Lemonaise instead of mayonnaise.  They loved it and never mentioned that it tasted any different!  Yippee, I successfully tricked them again!


4 slices bread, I used wheat free but you pick what is good for your family
6 slices turkey bacon
4 romaine leaves, washed and dried
1 tomato, sliced
3 tablespoons lemonaise (or mayonnaise if you prefer)
Salt and Pepper to taste

Method

1) Place the turkey bacon in a skillet and cook on the stove top until lightly browned on both sides. Remove and allow to sit on paper towels until bread is prepared.
2) Meanwhile, toast the bread in a toaster until lightly browned and place 1 1/2 tablespoons of the lemonaise on one slice of bread per sandwich.
3) Layer the lettuce, turkey bacon, tomato on the lemonaise lined bread and salt and pepper to your liking.  Top with another slice of toasted bread and serve at once.  Yummy!

Warm Amsterdam Cheese and Turkey Sandwich with Baked Cranberries

Remember the Baked Cranberries I made for Thanksgiving?  Well, here is a warm sandwich I made for my husband today using the cranberries in the sandwich.  This was really yummy and I also used up some more of the leftover turkey we have as well...Yippee!

2 Slices Whole Grain Bread
3 Thinly sliced pieces of Old Amsterdam Cheese
2 slices of Turkey Breast (I used leftovers from Thanksgiving)
1 Tablespoon of  Baked Cranberries (Previously made, or use canned cranberries)
1 Piece of Romaine lettuce
3 pieces of Italian parsley
1 1/2 teaspoons Smart Balance Mayonnaise with Omega Plus

Method

1)  Place the Turkey and slices of Cheese on the bread.  Heat either on a panini machine or just use a plan old frying pan and warm on both sides until the cheese has melted.
2)  Next, open sandwich up carefully, and place mayo, lettuce, parsley, and cranberries.  Put back together and serve ASAP.
3)  Enjoy!  The cheese has a rich and robust flavor which really melds well with the turkey...LOVE IT!

Giacobbe Meatball Sandwich

With all the snow we had today I was not in the mood for a long dinner...I needed to shovel!!!I tend to make meatball sandwiches for my boys on crazy days and this was one of them!  These are so easy and I take them right out of the freezer!  I got this recipe from my mother-in-law years ago and still make them today.  She was Italian and she was an amazing cook.  I would always call her when I wanted to make an Italian meal she was the expert.  Here is a recipe she gave me for homemade meatballs.  I normally make a couple batches and freeze them for when I need a quick dinner.  Enjoy!


1/2 pound ground beef
1/2 pound ground pork
1/2 pound ground veal
2 eggs
1 1/2 cups breadcrumbs
1/2 onion, chopped
1 small clove garlic, minced
1/2 cup Parmesan cheese, grated
Salt and Pepper to taste
Add water if it seems dry
NOTE: I usually make the meatball and use a little water in may hands to smooth out the meatball and make it stick together better.
1  Italian loaf of bread sliced for serving

Method:

Roll meatballs, and place in a 350 degree oven for 1/2 hour or so.  Rotate meatballs while cooking!  Once meatballs are cooked you can add to a Tomato sauce or you can freeze them for later use.  To reheat, just put the meatballs you wish to consume in a small sauce pan either with the sauce you want to use or a little water and a lid.  Warm them on medium heat for about 20 minutes until warmed all the way through.

Tuscan Turkey Sandwich with Lemonaise

The kids did not have school today which meant me making lunch for the gang.  So I made bagel sandwiches with a 'Lemonaise' rather than Mayonnaise for a lighter 'flair'.  This is really yummy, you should try this if you can't have dairy...a great alternative!


4 bagels (your choice)
2 slices "Boar's Head Tuscan Turkey" per sandwich (8 slices total)
1 Tablespoon Lemonaise "The Ojai cook brand", per sandwich, (4 tablespoons total)
1 leaf of Romaine lettuce per sandwich (any other greens you feel like adding is always a benefit)
1 slice of tomato per sandwich (4 slices total)
1 slice Gruyere cheese per sandwich (Omit this is you can't have dairy)
Salt and Pepper to taste


Method:

Layer the ingredients in an eye pleasing way and serve. Beautiful, served with sliced peaches on the side. Serves 4.

Organic Ham and Swiss Sandwich

On a rare occasion I'm at home during the lunch hour!  So today I made sandwiches for lunch.  They were really easy and delicious!

4 Slices organic ham
2 pieces of romaine lettuce
2 slices of Swiss cheese
2 high quality rolls
2 tablespoons Sun Dried Tomato Pesto Mayonnaise (I used Boar's Head brand)

Method:

1) Preheat oven on to 400.
2) Arrange the sandwiches to your liking, (ham, Swiss, and sun dried tomato pesto mayonnaise on a roll) leaving the lettuce off until after heating in the sandwich in the oven.
3) Place the lettuce on the sandwich and serve.

Artisan Boars Head Chicken Salad Sandwich

This was lunch today, but could easily be a dinner as well.  This was very easy to make... Enjoy!

3 slices of boars head chicken (you could use a different brand)
3 Artisan lettuce leafs
1 tomato, sliced
1 avocado, sliced
1 tablespoon of smart balance mayonnaise, spread onto the bread
2 slices of 15 grain bread
Salt and Pepper to taste

Method:

Place sandwich together how you would like and enjoy!
