Key Lime Pie Smoothie Bowl with Pureed Mango Sauce

  Who doesn't like dessert?  Something about a Key Lime Pie or Lemon Meringue Pie that seems light and refreshing.  However, we all know the calories that are involved, so I needed an alternative and needed to make it healthy too.  Here is my Smoothie bowl version and the fresh mango topping was added to compliment the tartness and add a little sweet.  Enjoy! P.S. Whole foods had Mango's on SALE 2 for 4 dollars this week!!!

 Ingredients:

1/2 fresh mango seeded and cut into chunks
1 cup kale, packed
2 tablespoons Barlean's Key Lime Swirl
1/2 cup water
1/2 fresh lime squeezed in
1 frozen banana

Method:

Blend all above ingredients and place in a shallow bowl.

Pureed Mango Sauce:

1/2 fresh mango, cut into chunks
2 tablespoons vanilla Almond milk
 1/4 teaspoon powdered stevia
1/4 banana (2 tablespoons max)
Blend all of this together and place in a plastic bag, cut a little tip off the bag and drizzle over the smoothie bowl.  I added fresh mango stars, fun little mango design in the center, and drizzled some more Barlean's Fish oil (Key Lime) over top...just to make me smile. Serve ASAP and ENJOY!

Cherry Vanilla Loven Smoothie Bowl

  This is for my workout friend... she knows who she is!  A little Valentine's Loven for her, of course I ate it... but my heart was in the right place.  The fun thing about smoothie bowls is you really can have fun decorating them up before serving.  Not to mention you can add all kinds of healthy toppings.  In this smoothie bowl I used organic frozen Tart Cherries!  Here are some benefits you most likely didn't know was hiding in these tasty tart little things.
1) Cherries battle belly fat:  In a study done on animals they noticed when they were fed Tart Cherries they had a significant lower belly fat!  Maybe that's why I like them...lol!
2) Cherries combat post-workout soreness:  Studies show 1 1/2 cups of Tart Cherries or 1 cup Tart Cherry juice significantly reduces muscle soreness.  Drink up workout buddies!
3) Cherries reduce stroke risk: Researchers from the University of Michigan Health System found that Tart Cherries provide cardiovascular benefits equal to some medications. 
Cherry Loven
 Ingredients:

1 1/2 cups frozen organic tart cherries
1 cup organic tart cherry juice
1 frozen banana
2 kale capsules, empties of there content
6-10 drops vanilla stevia drops
2 tablespoons Spectrum Warrior Vitality Blend (Chia, Maca & Cacao Nibs) Pictured below
drizzle of Barlean's Swirl (your flavor choice)

Method:

Blend cherries, cherry juice, banana, stevia, kale capsules in a blender on high.
Divide the Spectrum Warrior blend evenly in each corner or around the edge, cut out Banana hearts or whatever your choice is and drizzle Barlean's Swirl over top.  Serve!

Tiffany's Sauteed Sole & Vegetables

I've been enjoying this super easy dinner for my blood type, when the thought occurred to me..."Why am I not using this in a blog post?" So, I made the same thing I had for dinner last night for Lunch today (I think I'm addicted to this)!  It's SUPER Yummy and uses up all the stems of my Purple kale so I end up using the entire bunch of kale without throwing any part of it away.  When you are buying organic and you have two boys you don't want to waste anything...I guess this is the Swedish in me:)  Everything pictured here is edible...including my cute little XO. (Kisses & Hugs to all my super nice followers)!  Have a great day!

 Ingredients/Method :

1 sole fillet, sauteed on the stove top in olive oil until just done, remove and set aside
Add 1/4 cup olive oil to the pan that sauteed the fish along with
1 cup fresh broccoli
2/3 cup purple onion, diced
2 cloves of garlic, sliced
1 cup of kale, use both the stems of the bunch and then the rest slice the leafy part
1/4 teaspoon freshly ground celtic sea salt& Pepper to Taste

Serve on top of the Fish and enjoy!  Seriously my favorite O Blood Type Diet Meal!  

Just think my boys complain about their food being decorated...I mean REALLY?

Wheatgrass Smoothie Bowl

Wheatgrass can be SO overwhelming, but I'm determined to have a shot everyday until my body gets used to it.  I think I'll post a story tomorrow as to why this is SO important to me.  But, for now you are stuck with all these recipes.  In this recipe today I made a cold soup and incorporated the wheatgrass!  I always make cold soups in the summer, usually a cantaloupe or cucumber soup, but today I wanted this soup to have a little more substance so I called it a smoothie bowl instead... purely because of the consistency.  This is certainty something I'd drink from a glass and I wouldn't add all the cute cut up fruit on top, but when it's in a bowl this is pure perfection and looks good as well.  So, if you're bored with the usual smoothies make it into a bowl.  Oh, sorry about the smiling bananas but my son and I hiked Helen Hunt Falls this AM and he had these really cute donuts...so of course my meal had to be cuter, lol!

Ingredients:
3/4 banana, the other part I used as decoration on top
3/4 kiwi, the other 1/4 I used for top decor
3 dried figs, 1 sliced for the top
1 scoop Organic Wheatgrass
1 cup frozen mango chunks
1/2 cup Organic pineapple juice
1/2 cup purified water
Chia seeds to sprinkle on top
Method:
Place 3/4 banana, 3/4 of kiwi, 2 figs, Wheatgrass, mango chunks, pineapple juice and water in Vita-mix and blend on high.  Poor into bowl and use remaining ingredients to decorate the top!  Yummy!

Tropical Wheatgrass Probiotic Shot with Mango Lemon Fig Chaser... Healthy Food Porn

After an early morning hike I'm so creative.  I think the clearing of my mind does wonders for me.  Today after I came home, I hadn't had anything to eat yet...I was starving!!! I made this drink and enjoyed every last drop.  If you're able to make this one...I would! So much goodness in one pretty glass.  Like I always say, "If it doesn't look good and taste good it isn't going in my mouth"!

Ingredients:
(Yellow Part: Mango Lemon Fig Chaser)

1/2 cup Frozen Mango Chunks
1 large dried fig, stem removed
1/4 lemon,  freshly squeezed
3/4 cup Organic Pineapple juice

Method: Blend ingredients and place in the bottom of the glass, place slices of fig if you wish!

Ingredients:
(Green Part: Tropical Wheatgrass Probiotic)

1 Scoop Organic Wheatgrass powder
1 cup Spinach, not packed
1/2 Banana, frozen
1/2 cup Organic Pineapple juice
1 tablespoon Barlean's Pina Colada Fish Oil Swirl

Method: Blend ingredients and place on top of the yellow Mango Chaser above

To Decorate the top plus get the shot of Mega Probiotic:
Ingredients:
1 wedge of lemon
1 dried fig
1 Shot of inner-eco to go Mega Probiotic tropical flavor
6 Coco Mango Pomegranate Chews (cut-up), purchased at Whole Foods in bulk section! OH MY are the AMAZING!
Method:
Poor Probiotic on top of drink and add Mango Chews as well, Decorate with Lemon wedge and Fig

Easy Foil Baked Cod on a Bed of Spinach

   I love sea bass and was originally going to make this recipe using that particular fish.  All I could find however, that looked and smelled fresh, was Cod.  So... I decided to use Cod to see how this recipe turned out and it was a big hit with the boys.  I hate to admit it but, when this fish is presented on a garlic salad (recipe is on this blog), it's so pretty you'll want to eat it.  Did I mention this recipe is super easy to make and is highly beneficial for all the blood types.  So, enjoy!



3-4 Cod Filets
1/4 cup olive oil
3 cloves of garlic, minced
1 tablespoon Celtic Sea Salt
1/2 tablespoon freshly ground pepper
1/4 cup white wine
Lemon wedges for Garnish

Take a piece of foil and line with parchment paper.  Place fish on parchment paper.  Mix olive oil, garlic, salt and pepper in a small container and divide equally on top of the fish.  Allow to marinate for 20 minutes while you preheat the oven to 450.  When oven is preheated, poor wine equally on top of each piece of fish and promptly place in the oven.  Meanwhile, make the Garlic Salad Dressing (Recipe located on this blog under Salad's).  Arrange spinach on plate, decorate with tomatoes if you would like and when fish is fully baked (around 10 minutes), place on top of the salad.  Serve ASAP.  ENJOY!

Before putting the fish in the oven put 1/4 cup white wine on the fish.  Always make sure to cook with a white wine you drink, never use cooking wine.

Simple Adzuki Dinner...Highly Beneficial for O Blood Type Diet

Some of you are reading this and thinking...WHAT is that?  Well, Adzuki (or Aduki) beans are most likely one of my favorites because of the health benefits they provide.  They are on the Highly beneficial list for the O Blood type diet (I should say lifestyle) and also a staple if you eat a Macrobiotic diet.  These little small red beans are a protein packed staple in my house and are known in Traditional Chinese Medicine to support healing properties for the kidney, bladder and reproductive function.  These beans are a good source of magnesium, potassium, iron, zinc, manganese and B vitamins.  They could also be considered the "weight loss bean" since they are so low in calories and fat, yet very high in nutrition content.  Did I mention these beans really don't give you "gas" either??? Well, see now I've given you a ton of reasons to eat these little guys.  This recipe I have here I came up with because I'm trying to only eat highly beneficial for my blood type.  I did place some sliced Avocado around the egg because I thought they added color.  I know...I know Avocado is on my "Avoid" list for the O blood type list.  But, all the other ingredients are on my "Highly Beneficial" list and make my metabolism run at maximum speed.
2 tablespoons Extra virgin olive oil
1/2 sweet onion diced
1/2 red pepper diced
1/2 can Aduki beans, drained
1 small clove garlic, minced
1 tomato diced
1 egg, over easy
1 tablespoon fresh parsley, minced
Few slices of Avocado for decoration if wanted and your diet allows

Method:

In a small sauce pan saute onions, garlic and red pepper in olive oil.  When onions begin to turn opaque add beans and saute another 2 minutes.  Add tomatoes and parsley and saute on low while making egg in a separate pan.  When egg is done, transfer beans to a plate and place egg on top and add avocado slices if you wish.  Enjoy!  This is crazy healthy and is quick and easy to make.

Chocolate Bark with Benefits

This is the easiest thing in the world to make...CRAZY EASY!  Yet, it's one of my favorites because I can get so creative with the toppings I put on the Chocolate bark.  In the picture here I actually made two separate kinds of chocolate bark.  I made some where I broke it into pieces once it was hardened and the other I placed in small circles before drying.  This made it easier to tell the different kinds apart,  and the kids knew which one they liked better.  Easy Breezy!

Ingredients:

4 Ghirardelli Chocolate Bars (2 Semi-sweet & 2 100% Cacao Unsweetened chocolate baking bars)
1 bag of Crystalized Ginger
1/4 cup Raw slivered almonds
1/4 cup Raw Pistachios
Pink Himalayan sea salt
Spectrum's Warrior Vitality Blend (My new favorite addition to things)

Method:

Place 1 semi-sweet and 1 100% Cacao chocolate bar in a microwavable container (something that has a pourable spout). Microwave until melted but, not bubbly, usually 3 1/2 minutes. Then pour chocolate onto a parchment lined cookie sheet with sides.  Sprinkle any or all the above listed toppings on top and set in cool place to harden (Refrigerator would be fine as well). I used the Almond's on one batch and the Pistachio's on another.  I also sprinkled the Spectrum Warrior Blend on the batch with the Pistachio's because I thought it looked a little more festive together.  In years past I've purchased lemon and orange rind to make the chocolates even more colorful.  Get Creative...I've even purchased spicy nuts from Whole Foods and placed those on top to give the Chocolate a little kick!  Happy Holiday's!

Holiday Butterballs with Benefits

Yes, you're reading this right!  My butterballs have benefits!  I've taken my girlfriends Mother's recipe and decided to change it up a bit.  I mean it's the holiday season and I know I'm going to eat things I usually don't eat.  So, I decided why not make the cookies a little more healthy and add some much needed protein while I'm at it!  This was actually much easier to do than I thought and it really didn't take long to get the amounts perfected like I thought it was going to take.  So...here you go!  They are Yummy!
Tiffany's Holiday Butterballs with Benefits
 Ingredients:

2 cups Bob's Red Mill Brown Rice Flour
1/4 cup Organic Sugar
1/2 teaspoon Salt (I used Iodized Salt...it's important)
1 1/4 cups Organic Nutiva Buttery Spread (Melted in microwave...don't allow to bubble)
3 teaspoons Vanilla Extract
2 Tablespoons Sun Warrior Blend Protein Powder (I used Vanilla flavored)
 2 cups chopped/crush Walnuts
 
 Topping:
1 cup Powdered Sugar
Mix in a colored decorative sugar if you would like (I used silver & gold pictured below)

Method:
Preheat oven to 375.  Mix the first six ingredients together with a hand held mixer, then stir in the walnuts.  The consistency of the dough should be crumbly (don't be alarmed)!  Take a quarter size(or slightly larger)  amount of the dough and press together until the dough sticks together, then place on a top of of a cookie sheet that is lined with parchment paper (you could a heavily buttered pan, but this way is not only cleaner but adds no more calories).  Place in preheated oven for 15 minutes.  As soon as you remove the cookies from the oven place in a bowl that holds your powdered sugar mixture (you can just use the powdered sugar if you would like...I just wanted to add color), then remove from your powdered sugar and place cookies in a container suitable for either the freezer or refrigerator.  They keep well in the freezer and I actually like them cold.  Enjoy...These are SOOOO YUMMY!

Fall Crock-pot for the O Blood Type

As most of you know from reading the blog I follow eating according to my blood type as closely as possible.  As soon as I'm not feeling my usual I start monitoring and following my food intake very strictly.  I try to eat ONLY off my "Highly Beneficial" list and will throw in a few neutral spices here and there to "SPICE" things up...OH MY REALLY BAD HUMOR, SO SORRY!  Here is my Fall Crock-pot staple that I make.  I then can use the meat during the week to feed the kids in a variety of ways, for example I'll make them burritos or something of that sort while I just stick with the warmth and hardiness of this stew for me.  I'm only telling you this because if you have children you will find they get bored and would not want to follow my meals.  So, I have to get creative for them and make it easy on myself all at the same time.  Hope you all enjoy this one.  I LOVE IT!

3-4 pounds boneless grass fed beef
olive oil
2 cups onions sliced
1 cup carrots (this is a neutral...but for the kids)
1 cup Parsnips, cut into chucks
2/3 cups turnip, cut into chucks
3 sweet potatoes, cut into chunks
1 tablespoon fresh ginger,  cut into pieces
1/2 cup red wine
Salt & Pepper to taste
Springs of rosemary for in the crock-pot, and fresh one to decorate your dish when serving:)

Browning the meat: Make sure the meat is thoroughly dry with paper towels - Damp meat WON'T brown!!!  Place olive oil in the pan about 1/4 cup (depending on the size of your pan), next place your dry meat in the hot oil and brown in batches, Turing the meat as needed! Add more oil as needed until you are finishes.  Transfer all the meat into a crock-pot.
Vegetables: Next, keep the pan you just browned the meat in and add fresh oil (just dump the old oil out). Then place the vegetables (Onion, carrots, turnip, ginger) and saute until still hard but a little brown.  Place this in the crock-pot.
Assembling:  Now, skim any remaining fat (oil) out of the pan and poor the red wine in and allow it to boil down a little.  Poor this into the crock-pot.  Now add the remaining ingredients into the crock-pot (Sweet-potatoes, rosemary, salt and pepper).  Stir lightly, place the lid over top and allow to slowly cook for 6-8 hours (depending on your crock-pot).  ENJOY!  I give the kids crusty bread on the side because they can have the wheat!  I on the other hand STAY AWAY from the bread!

Lemony Avocado Sauce over Jovial Pasta

Tonight I made grass fed beef burgers for the boys.  I don't eat wheat so I decided to make a rice pasta dish to have on the side.  I still have a ton of avocados to use up so here is the sauce I came up with!  I must say, I'm making this again! It was wonderful. 
1 teaspoon fresh ginger
1 1/2 tablespoons lemon juice
2 tablespoons red wine (I had a sweet one leftover)
1 teaspoon white vinegar
1 tablespoon soy sauce
1/3 cup oil of your choice, I used a mixture of olive oil and smart balance
Salt and Pepper to taste
Zest of the outside of the lemon you squeezed
1 ripe Avocado,  diced
1/2 box Jovial linguine wheat free pasta

Method:

1.  In a Vitamix, combine ginger, lemon juice,  red wine, white vinegar, soy sauce and oils until blended smooth
2.  Place the lemon zest and cut avocados in a bowl and toss with the liquid mixture you just made.
3.  In a pot of boiling water, cook the wheat free pasta until Just done
4. Poor the sauce mixture you made over the pasta and toss, serve at once.  Season with salt and pepper to taste. Enjoy!

Easy Sauteed Vegetables with Chicken...Products I LOVE

Everyone likes easy meals for nights that are consumed by kid sports...RIGHT?  This is when I start looking for food that's NOT full of preservatives, gluten free and can add flavor to my standby..."SAUTEED CHICKEN".   I always saute boneless chicken breasts on Sunday's and keep in the fridge to grab for quick meals.  Tonight, I added all "O" blood type vegetables that are on my highly beneficial list and made this in less than 10 minutes.  This is why I always keep an eye for interesting new products that come out.   This product is called Maya Kaimal Butter Masala, in Mild!  They have 5 different choices but I usually stick with mild because the kids become a little too picky when I try spicy things.
Easy Sauteed Vegetables with Chicken
2 tablespoons Olive oil
1 cup cut up celery
1 onion,cut in chunks
3 cloves garlic, sliced
1 yellow pepper, cut into chucks
1 red pepper, cut into chunks
1 1/2 cups broccoli, stemmed  
3 boneless chicken breasts, cut into chucks and sauteed
1 tablespoon fresh parsley
1/2 container of Butter Masala (Of your choice, pictured below)
1/2 cup water
Salt and Pepper to Taste
Serves 4

Saute vegetables in 2 tablespoons olive oil, add the cooked diced chicken and 1/2 container of Butter Masala and water.  Saute until sauce cooks down to half and a little thickened.  Add salt and pepper and sprinkle with parsley if you ave it! Perfect, quick and easy dinner for an O Blood type.  This would be a great meal for other blood types as well if you change out the meat and vegetables to suit your blood type.  Enjoy...it's REALLY yummy.
