Tiffany's Six Pack

Last night we had an amazing sunset.  I'm so glad I just happened to be out hiking with Lilly and decided to stay and watch the sun go down over Pikes Peak, I posted some pictures below I took with the phone.  Trust me when I say it was even more beautiful in person.
Today, I worked out early,  came home to get ready for the week and made green drinks to go.  This week I decided to add "Tags of Gratitude" to my Green Drinks.  I just want to remind myself of things I'm thankful for and not take things for granted.  Sometimes it's easy to feel bad because you are going through a tough time in life.  However, remember that no matter how bad your situation may seem, there are tens of thousands of things to be grateful for.  For example, I put "Love, Health, Friends, Family, Yoga & Pilates on one side of the tags and other side I added little sayings that mean something to me.  This will be a great reminder of how lucky I am and should put a smile on my face in the morning when I open the refrigerator.
All Ready To Go...NO RUSHING!
Ingredients:

2 organic pears
2 cups organic pear juice
3 cups organic spinach
1 organic apple
1 cup organic celery
2 cups organic purple kale
1 cup organic fennel
1/2 cup organic parsley
4 tablespoons Barlean's Omega Oil (You pick)
3 scoops Amazing Grass Brand Wheatgrass
2 tablespoons raw ginger, peeled and diced
1 cup frozen organic peaches

Method:

Blend in a Vita-mix and pour into containers.  VOILA! You are ready for 3 days...unless a boy drinks one...HA,HA!

Here they are in the refrigerator!  Ready to Go!
This was Amazing!

The sky kept changing by the second!

Just look at Pike's Peak!  Just WOW!

It looked like it was on fire!

Lilly Modeling of Course!

Look at her sitting getting her picture taken...What a HAM!
Have A GREAT Week!

Lagom Smoothie Bowl

Kids are back in school today so I made myself a special smoothie bowl.  I was originally thinking I wouldn't post today but would just make myself a special bowl and see how it turned out.  It turned out so good I decided to tell you about this one.  Here is the recipe, understand I made this specially for me so there will be ingredients you won't have on hand.  For example I ordered organic lingonberry preserves from a shop in Minnesota, you might have a hard time finding those.
Here's the recipe hope you can try it. Enjoy!
Not too little...Not too much...Just Right!
Ingredients:

1/4 cup fresh wheatgrass blended in high power blender
1/2 scoop Amazing grasses wheatgrass
2 tablespoons organic lingonberry preserves
1/2 cup fresh mango (I used Mango for the leaf decorations as well)
3/4 cup frozen peaches
2 organic celery stalks
1/2 cup Alkaline Water 8.8pH+
1 tablespoon Barlean's Orange Swirl Omega Fish Oil (+more for decoration)
Handful of Sprouted Almonds

Method:

Mix all the ingredients except for the almonds in a high powered blender, pour in a bowl and decorate how you wish.  Enjoy!

Mom & Son Smoothies... with Mango Slushy Topping

My little guy is still recovering from the concussion.  When I got home this morning he said to me, "Mom can you make me the smoothie bowl but not in a bowl?"  I replied, "Sure"!  But, of course as I began making it I thought, "Well, this is kinda boring and I want a bit of greens mixed in mine...Oh and maybe a Mango slushy topping".  So, in this little post I'm just going to tell you how to make the Mango topping that is on my drink because I've already posted the recipes about the blueberry and green drink portion of the beverages.  If you want to look it up, the blueberry portion is the "Concussion Smoothie Bowl" and the green part of my drink is what I called "Blooming Banana Greens in a Jar". But, seriously the best part of my drink is the TOPPING!  It's what I make when I want ice cream.  This is super easy and works with any frozen fruit.  The only catch is you need a high powered blender or this won't work.  Enjoy!!
My drink is to the left!  I topped it with My Mango slushy and fresh mango slices.... YUMMY!
 Ingredients:

1 Cup Frozen Organic Mango Chunks
1 heaping teaspoon of Organic honey
1/4 cup fresh water or mango juice if you have it, you can even use Almond milk

Method:

Blend on high in Vita-mix, this won't work unless you have a high powered Blender.  But, I must say it's my favorite summer time beverage and worth making if you have a high powered blender.  I substitute frozen pineapple, blueberries, cherries, peaches...literately any fruit.  Enjoy, Enjoy!
I also topped mine with sprouted Almonds....YUM~O!

Perfect Passion Cherry Smoothie

This smoothie I made for my son today was packed with more goodness. I'm determined to get him healthy and his brain working at full capacity by the time he goes for the Concussion Test next week.  I know I'll do it, with all the Omega's I'm getting into his body.  So...here's another recipe that's great for you, even if you don't have a brain injury.  Have a great weekend!
With a kiss from MOM:) Trust me he would rather have the lipstick on the glass:)
Ingredients:

1/2 banana (the other half I used for decoration)
1 1/2 cups Organic Cherries
1 cup kefir
1 scoop Wheatgrass
2/3 cup organic dark cherry juice
1 tablespoon flax oil
1 tablespoon Barlean's Orange swirl fish oil

Method:

Blend all ingredients in a vita-mix and decorate how you wish.  I cut hearts out of low glycemic Papaya (Pictured above).  Enjoy, this is super kid friendly and they don't know you packed it full of nutrition.

On today's hike and Yoga... Lilly got all cutesie on me!

Concussion Smoothie Bowl

They say that nutrition is one of the most important aspects of brain health after a concussion.  My little guy got a concussion last night, which kept me up checking on him throughout the night, (If you have kids you know what I'm talking about).   I know that nutrition plays a huge part in recovery so I went to the store this morning to find the necessary foods to feed his brain well.  This is not as simple as it sounds because with concussions you can be nauseous all the time.  Luckily, I think this is a mild concussion and any nausea he had last night was not evident this morning.  So, my quest on healing began.

Here is what to stay away from if you've had a concussion:  Cooked oils (anything fried), sugar, caffeine, alcohol, artificial colors and flavors. - basically all the things you've heard of that are bad for anyone are especially terrible for your brain when you have a concussion.

Here is what to eat/drink if you've had a concussion: Avocados, blueberries, kefir, meat from grass fed cows, nuts & seeds, (OMEGA'S are NOW YOUR BEST FRIEND),  raw honey (heals tissues), wild salmon, eggs, coconut oil (If cooking), and obviously... drink water.

A couple things I also am doing per a Dr. friend is: NO MEDIA, stay in a dark room and just rest, don't read (rest the brain),  a headache means you need more rest and you are over doing it.  REST, REST, REST!  I think of this as CONCUSSION JAIL:)

I will have this boy healed in record time... just watch me!
Ingredients:

1 cup frozen organic wild blueberries
1 scoop of organic wheatgrass (I use Amazing Grass brand)
1 cup of organic kefir
1 tablespoon flax oil
1/2 cup organic wild blueberry juice

Method: Blend all above ingredients in a Vita-mix blender, if you don't have a high powered blender add more blueberry juice or kefir.

TOPPINGS:
This is the best part so don't forget to make your loved one feel special! Plus they'll want to eat more if it's pretty!

1 cup fresh organic blueberries
10-12 sprouted raw almond (you don't have to sprout them I just had some)
1 tablespoon Barlean's Pina Colada Swirl OMEGA oil (THIS IS A MUST)
5-6 Coco Mango Pomegranate Chews (I buy these at Whole Foods in bulk, Coco stands for Coconut)
1 slice banana, cut in the shape of a moon... he needs to go rest more:)

The Moon means he needs more rest after eating this yummy healthy bowl!
Him diving in and licking the sides...PERFECT!

STAY WELL!

Key Lime Pie Smoothie Bowl with Pureed Mango Sauce

Who doesn't like dessert?  Something about a Key Lime Pie or Lemon Meringue Pie that seems light and refreshing.  However, we all know the calories that are involved, so I needed an alternative and needed to make it healthy too.  Here is my Smoothie bowl version and the fresh mango topping was added to compliment the tartness and add a little sweet.  Enjoy! P.S. Whole foods had Mango's on SALE 2 for 4 dollars this week!!!
The green in this smoothie bowl looks so bright outside.
 Ingredients:

1/2 fresh mango seeded and cut into chunks
1 cup kale, packed
2 tablespoons Barlean's Key Lime Swirl
1/2 cup water
1/2 fresh lime squeezed in
1 frozen banana

Method:

Blend all above ingredients and place in a shallow bowl.

Pureed Mango Sauce:

1/2 fresh mango, cut into chunks
2 tablespoons vanilla Almond milk
 1/4 teaspoon powdered stevia
1/4 banana (2 tablespoons max)
Blend all of this together and place in a plastic bag, cut a little tip off the bag and drizzle over the smoothie bowl.  I added fresh mango stars, fun little mango design in the center, and drizzled some more Barlean's Fish oil (Key Lime) over top...just to make me smile. Serve ASAP and ENJOY!

Lunch Time!

Morning C's plus Wheatgrass

What to do when everyone in the house is coming down with a cold?  Well, in my case it's giving everyone an overload of Vitamin C, Echinacea and Goldenseal.  I don't really go too over board but the idea is to knock this out of our bodies so we can go have fun.  They call Echinacea and Goldenseal "The Dynamic Duo".  I put the liquid extract in a drink of choice and today I also added the benefit of Vitamin C and Wheatgrass.  You would never know I'm drinking these powerhouses because I have hidden them in the drink.  HA, HA the guys don't know, wink, wink!
It helps the "Medicine go down" when I make the drink cute!  This doesn't taste like medicine..I was teasing!
Ingredients:

1/2 scoop of Organic Wheatgrass (Scoop comes in container)
1 dropper full of Echinacea
1 dropper full of Goldenseal
1 teaspoon of vitamin C powder (1000 mg)
2 cups pineapple (I used fresh with the juice)
1 cup papaya (I used fresh)
2 kiwi fruits (Skin removed)
1 cup celery
1 tablespoon Barlean's Swirl (you pick which variety you like) the kids like Pina Colada

Method:

Blend all together in a Vita mix and decorate how you wish.  I used Dried papaya slices (low sugar) and kiwi stars for a little fun design.  P.S. This is how I distract the boys from eating healthy food.  Sometimes it works other times they catch onto me, lol!

I cut little kiwi stars for inside the beverage... but they are hard to see!
A little Yoga from yesterday's evening hike, I loved the heart shape in the rock to the right of me, kinda cool!
Have A Healthy and Happy Day!

It's February 1st and everything is still brown and NOTHING is growing.  I decided I needed to see something not brown or covered with snow so I made my green drink today "look" like it was growing.  I added the banana hearts for a little fun!  This drink is packed with everything green with the exception of the bananas!   Enjoy your Sunday and the football game!

Pina Colada Fruition

IT'S FRIDAY FUN DAY!  Another day... Another green drink and a fun hairdo to boot!  I went on a walk with Lilly this A.M. and this guy I passed stopped me and wouldn't stop talking about my hair.  I can't stop laughing because if he only knew how much effort I didn't put into this.  I literally worked out then thru it all up into a ponytail (all messy).  But, in all seriousness and back to the important beverage... I absolutely LOVE this Green Drink, it's so refreshing!  You can't beat a healthy Pina Colada.  Every time I purchase fresh Pineapple I end up making at least one of these smoothies. Enjoy!
Very tasty and refreshing!
Ingredients:

1 cup fresh pineapple
1 cup, a mix of spinach and red kale
1/2 cup Organic pineapple juice
1/2 cup water
1 cup chopped celery
2 tablespoons Barlean's Pina Colada
1 tablespoon spirulina powder
1/2 scoop of organic wheatgrass powder

Method:

Blend all well in a vita-mix, pour in a glass and serve.

SEE...what a mess:)

I didn't even manage to get all my hair up!  Too Funny!  I guess messy is in:)
