Wild Rappini Blueberry Probiotic Smoothie

  I felt like I needed some Probiotic's today for some reason so I decided to pickup a container of Mega Probiotic from inner-Eco and add it to my afternoon smoothie.  I also really wanted greens but wanted my drink to be any other color than green today...for some reason.  This drink was just what I was craving and I got the extra bonus of having a Probiotic at the same time, not to mention all the ingredients are on my highly beneficial list for my blood type!  YEA!!!

Ingredients:

1 1/2 cups Rapinni
2/3 cup frozen wild blueberries
1 frozen Banana
1 cup water
1 container of inner-Eco to go Mega Probiotic (Berry Flavor)
Chia seeds to sprinkle on top of drink

Method:
Place Banana, Rapinni, wild blueberries and water into vita-mix and blend on high, 2 minutes.  Poor 
into a clear glass and immediately poor the whole bottle of inner-Eco Probiotic into smoothie, this will fizz when it hits the smoothie (Just remember not to shake the contents of the probiotic), top with Chia seeds if you would like and drink at once.  This is very refreshing.

Green Mango Martini's... Non-alcoholic with Protien

Once you read the ingredients you'll know calling this a Martini is a HUGE stretch...even for me!!! But, I'm sure you all have that one friend that is extremely health conscious.  Well, this green mango martini will please them and is loaded with healthy ingredients including protein.  Did I mention it looks really cute in a martini glass...'SAY YES' to this green drink...ENJOY!

2 cups spinach
1 frozen banana
1 cup frozen organic mango chunks
1 scoop Sun Warrior Protein Power (Vanilla)
8-10 drops Sweet Stevia Drops
1 tablespoon Barlean's flax seed oil
1 cup Mango juice
Mango wedges for decoration
  
Place all ingredients (Except for the decoration mango wedges) in a vita-mix or high speed blender, poor in Martini glasses, use mango wedges for decoration and serve.  Serves two people.

Chocolate Cherry Green Drink...Perfection!

Well, I hope everyone's day was delightful?  I had an eventful day here with the weather and some car issues.  But,  making this drink has made the day much better.  I think you all will agree that this drink not only sounds good, but if you're lucky enough to make it you won't be disappointed.  It's smooth texture and hint of chocolate makes me think of the Cherry Garcia ice cream I once enjoyed before cutting dairy out of my diet,  and it has all beneficial ingredients for the O blood type so it gets extra points for that as well.  Enjoy!


Ingredients:

1 cup Organic Black Cherry Juice
2 cups packed organic red kale
2/3 cup frozen cherries
3 dried figs
1 frozen banana
6 drops Chocolate Stevia Sweetener
2 tablespoons Barlean's Flax Oil



Method:

Place all the above ingredients in a Vita-mix and mix on high.  Enjoy!  I think I'm in LOVE!

Easy Foil Baked Cod on a Bed of Spinach

   I love sea bass and was originally going to make this recipe using that particular fish.  All I could find however, that looked and smelled fresh, was Cod.  So... I decided to use Cod to see how this recipe turned out and it was a big hit with the boys.  I hate to admit it but, when this fish is presented on a garlic salad (recipe is on this blog), it's so pretty you'll want to eat it.  Did I mention this recipe is super easy to make and is highly beneficial for all the blood types.  So, enjoy!



3-4 Cod Filets
1/4 cup olive oil
3 cloves of garlic, minced
1 tablespoon Celtic Sea Salt
1/2 tablespoon freshly ground pepper
1/4 cup white wine
Lemon wedges for Garnish

Take a piece of foil and line with parchment paper.  Place fish on parchment paper.  Mix olive oil, garlic, salt and pepper in a small container and divide equally on top of the fish.  Allow to marinate for 20 minutes while you preheat the oven to 450.  When oven is preheated, poor wine equally on top of each piece of fish and promptly place in the oven.  Meanwhile, make the Garlic Salad Dressing (Recipe located on this blog under Salad's).  Arrange spinach on plate, decorate with tomatoes if you would like and when fish is fully baked (around 10 minutes), place on top of the salad.  Serve ASAP.  ENJOY!

Before putting the fish in the oven put 1/4 cup white wine on the fish.  Always make sure to cook with a white wine you drink, never use cooking wine.

Winter Wonder Green Drink for the O Blood Type

  When winter kicks into full gear I usually crave warm food and drinks.  However, lately I've just been wanting my standard green drink for some reason.  I've decided to add to it a bit and make it a highly beneficial green drink by not adding anything that;s not considered beneficial for my O blood type.  Hope you can make this one at home...it's like a mini vacation for your mouth to a warm climate!  Enjoy!
Winter Wonder Green Drink
2 cups spinach
1 cup collard greens
1 cup kale (I did baby kale)
1/2 cup Dandelion greens
1 green plum, pitted
1 tablespoon fresh peeled ginger root
2 fresh figs
1 cup organic pineapple juice
2 tablespoons Barlean's Pina Colada Fish Oil Swirl
1 teaspoon B12 liquid (your choice of liquid vitamin), this was one dropper full for me
3/4 cup water


 Mix all the ingredients in a Vita-mix, or blender of your choice and ENJOY!

Baked Honey Cardamom Salmon in Foil - AMAZING

Hope everyone's Christmas Eve and Christmas were delightful.  Our Holiday's were nice and quite which is really what I had in mind.  I did plenty of cooking and actually played around with different recipes before starting another house project.  This year my son requested a honey baked ham from the Honey Baked Ham store.  I'm not a huge fan of ham so I decided I wanted salmon and thought a honey baked version sounded delightful.  So off I started and played around with three different ones.  The one here was so amazing that I'm planning on making it on New Years Eve as well. Here's the recipe and I know you are shocked that I added cardamom for a little Swedish twist.
1 1/2 - 2 lbs Salmon
1/4 cup organic honey
1 1/2 tablespoons white wine (NOTE: only cook with something you would drink)
1 tablespoon ground Cardamom
1 teaspoon white vinegar
Freshly ground sea salt & pepper to taste
1 tablespoon Organic Maple Sugar (I buy mine from Coombs Family Farms online, this is a traditional sweetener I learned about while living in Canada for a few years)

Method:

  Preheat oven to 400 degrees F.  Take a big piece of foil and line it with a piece of parchment paper.  fold up the edges so the liquid does not run out and begin preparing the marinade.
  In a small bowl, whisk together honey, white wine, cardamom, white vinegar and salt and pepper.
Place Salmon on parchment lined foil with edges bent up and pour mixture above on top.  Be sure to re-season the fish with salt and pepper and then fold sides of the foil over the salmon completely and sealing the packed closed.  Allow to marinate in the refrigerator for 10 minutes before placing in the oven.
  Place fish in the oven for 12 minutes.  Pull fish out of the oven, open up the foil and sprinkle the Maple Sugar evenly over top the fish.  Put back into the oven for another 4-6 minutes until fish is  completely cooked and sugar has lightly browned.  Serve immediately.

Pepparkakor (Gingersnaps)

Traditionally speaking Swedes have gingersnaps (Pepparkakor) all year long (usually I just buy them), but at Christmas time it's kinda fun to make them.  I always make them in the shape of little gingerbread men and women but they can also be made in the shape of hearts or pigs.  I think I'll stick with the gingerbread men just for my traditional needs.

 Ingredients 

7 oz. brown sugar
7 oz. white sugar
7 oz. dark corn syrup
3/4 cup water
10 oz butter
2 tablespoons ground cinnamon
2 tablespoons ground ginger
2 tablespoons ground cloves
1 tablespoon baking soda
2 lbs flour (You can use rice flour if you prefer not to have wheat)

Method

Heat the brown and white sugar along with the corn syrup and water in a pot. Add the butter and let it melt.  Stir in spices and baking soda.  Then mix in the flour until you reach a smooth consistency.  Place dough in the refrigerator to cool for at least 3 hours, over night is best.  Then take the dough and knead it on a large cutting board, adding flour (or rice flour) if it gets sticky.  Roll it out and cut into your desired shapes and bake at 350 for 10 minutes.  Cool on a rack and decorate to your liking.
