Atypical French Onion Soup?

Interesting title...but oh so good!  I love 'French Onion' soup but never think of making it.   However,  today I came across these little clay baking dishes!  They were so cute I had to make something?  The only thing I had a lot of was onions!  So...here it is! French Onion Soup with a twist!


4 small baking dishes
5 medium yellow onions, sliced
1 tablespoon olive oil or butter
1/4 cup dry sherry
2 cups good quality beef broth, warmed in microwave
4 small Artisan Crostini bread, or hard toasted bread of your choice
1 cup freshly grated Gruyere cheese (1/4 cup per baking dish)
Salt and Pepper to taste
Parsley for decoration

Method:

1)  Preheat oven on 450.  Saute sliced onions in the olive oil until onions have browned slightly, about 5 minutes on medium-high temperature.  Poor in the dry sherry and cook down to 2 tablespoons or so.  Remove from heat and divide into bowl.

2)  Add the warmed beef broth and salt and pepper, to your liking.
3)  Next, place a crostini (or bread of your choice) on top.
4)  Next, place the cheese and put directly in the oven until cheese begins to melt, about 8 minutes (depends on the size of your containers).  Next, change the temperature of the oven to broil.  Broil for 2 minutes or until the cheese browns slightly.

5)  Serve immediately with crusty bread, popovers, or a small side salad.  Enjoy!
