No Pasta Lasagna

This recipe comes from my wonderful and very beautiful friend Carol.  She has a gorgeous garden and noticed she had to many large zucchini's growing and needed a way to use them up.  So here is her recipe she said I could share it with you:

3 large Zucchini, thickly sliced
1 cup Italian bread crumbs
1 eggs, whisked
3 tablespoons olive oil
3 cups pepper jack cheese, grated
1 jar of tomato sauce, your choice (homemade is great too)
Salt and pepper to taste

Method:

1) Put egg in small bowl and coat each zucchini disk in the egg, then coat with the bread crumbs.  Saute the breaded zucchini in a pan on the stove then, transfer to a paper towel to soak and extra oil.
2) After you finish with Zucchini, take an 8X13 pan and spray with a nonstick cooking spray.  Layer the Zucchini first then top with cheese then place a little tomato sauce and repeat this step.  You can add a little Parmesan on top when you are finished layering and a little salt and pepper to taste.  Place in a preheated 350 degree oven for 20 minutes or until the zucchini seems done. Yummy!
