Tiffany's Easy Frittata

Dinner tonight is an easy one!  Frittatas are wonderful to have with a salad on the side.  When you have nothing but eggs in the house and a can of tomatoes try this one (If you don't have basil growing in the garden use a little dried basil instead) Here is an easy recipe that looks way more complicated.

6 eggs (or a mix of egg whites and regular eggs)
1 cup onions sliced very thin
1/4 cup extra virgin olive oil
1 can of diced tomatoes & juice
1/2 cup fresh basil, cut into pieces
3 Tablespoons grated Parmesan
2 tablespoon butter
Salt & Pepper to taste

Method:

1) Put the olive oil and onions a saute pan and saute until onions become golden in color.  Add tomatoes and generous pinch of salt.  Continue cooking until at a simmer until tomatoes soften (15 minutes).
2) Drain the onion mixture and allow to cool.  Meanwhile, set the oven to broil.
3) Mix eggs together until well blended.  In eggs mix in Parmesan cheese, basil and 1 teaspoon salt and a generous grind of pepper.  Then mix onion mixture in the egg mixture.
4) Put 2 tablespoons of butter in a saute pan that is suitable to go into the oven as well.  Make sure to swirl the butter up the sides of the pan where the egg mixture will touch.  Pour egg mixture in pan and cook on the stove top on low until eggs seemed to have set (DO NOT STIR)!  Once egg mixture looks set but the top is still runny put pan in the broiler for a few seconds (Do not Brown it just to set the top)! Serve at once as you would a slice of pie and a salad on the side.  This is great!
